Lauki Wholewheat and Oat Bran Bread Rolls


Trying to stay awake late for a second night in a row and not dissolve into a puddle of tears of frustration and disappointment, decided to do some late night experimental baking with better success than a certain Latin American favourite football team.
I wasn’t sure if this will work but thought that if zucchini made whole grain breads moist then so should lauki (bottle gourd). It is still a slightly dense bread because it has only whole wheat flour and oat bran but it still came out soft. Hot bread rolls and butter/ olive oil dip helped drown sorrow like nothing else in the middle of the night.

Ingredients
2 cups whole wheat flour
1 cup oat bran
1/2 tbsp instant yeast
1 1/2 cup grated lauki (salted and squeezed to take out water and then measured)
1 1/2 tbsp olive oil
1 1/2 cup warm water
1 tbsp sesame seeds
1 tsp salt
For the glaze
1 tbsp each olive oil and milk
(Someone told me to try this but I thought just regular milk glaze worked just as well if not better)
1 tsp sesame seeds
1 tsp nigella seeds ( kalonji/ kala jeera)


Method
Mix the flours, yeast, sesame seeds and salt in a bowl. Add the lauki and oil and mix well.
Make a well in the centre and pour half the water. Bring it all together and keep adding water as required to get a soft slightly sticky dough.
Flour the surface and knead the dough with your hands, pulling and stretching repeatedly. Spend some time doing this as there is no maida or additive and you want to release as much gluten from the whole wheat as possible. Roll it into a ball and put in a bowl. Cover with a damp cloth and leave to rise for an hour. The dough should have almost doubled in size.
Take it out onto a floured surface and cut into 12 equal pieces. Punch the air out and roll into 12 balls. Place them apart on a baking tray. I placed them in a muffin tray.
Cover with damp cloth and leave for a second rise for about 30 mins
Preheat the oven to 200 Celsius.
Brush the tops of the rolls with the milk-oil mix and sprinkle the seeds on top.
Bake for about 20-25 mins. Take one out and tap the bottom, if it sounds hollow, it is done.
