Paneer Cutlet

The boy has got his taste for paneer from the Punjabi half of his genetic makeup. He can be fed paneer for breakfast, lunch and dinner and then some more.

On a recent visit to Delhi, he had some Paneer Cutlets (or chops) from the Bengali Sweet Shop, Annapurna in Green Park. And oh boy, did he love them! Despite the fact that they were very spicy for him (we are not allowed to put even a sliver of green chilli or a speck of red chilli pwd on his food normally), he gobbled them up and wanted more.
Ever since, his grandmother has been on a mission to find a suitable recipe to make him some paneer cutlets. After scouring the web, I found this recipe which was simple but different from the way we normally make paneer cutlets at home.
This is a joint effort by his Thamma and Mamma, and the boy loved them!
(as you maybe able to tell from the picture, there weren't very many left)

The recipe given below is the one from the web. The only changes we made were that instead of mint and coriander, we used coriander and methi leaves (fenugreek) , and of course, left out the chillies.




Ingredients

1 cup Grated Paneer
1 potato -(boiled,peeled and mashed)
3 green chillies
2 cm size ginger(peeled)
5 garlic cloves (peeled)
1 green cardamom
1 cinnamon stick
1 cloves
1 1/2 tsp salt
1/2 tsp garam masala

1/4 tsp turmeric powder 
1 tsp fennel seeds
2 big onions - finely chopped
1/2 tsp pepper corns
1/4 cup finely chopped coriander and mint leaves
2 eggs-(beaten well with salt - 1/2 tsp)
2 tbsp bread crumbs
5 tbsp refined oil

Method
Grind green chillies, pepper corns,cinnamon stick, clove, green cardamom, ginger piece and garlic into a paste.
Heat 1 tbsp oil in a kadai and saute chopped onions till the onion is golden brown.
Add coriander and mint leaves,fennel seeds and green chillies-ginger paste.saute till oil separates from the mixture.
Add boiled and mashed potato next and then turmeric powder and salt . mix well.
Add grated paneer and saute till the mixture becomes thick and evenly spread like dough.Remove from fire. Let it cool for 20 mins.
Form into desired shape pieces using moulds.
Dip the shaped pieces in beaten egg(or corn flour paste) and then roll them in breadcrumbs.
Heat the remaining 4 tbsp. of oil in a frying pan and shallow fry until golden brown on both sides.
