This was my twist to an even simpler recipe I found on BBC Good Food page. The boyz liked it, Vyom actually said "Thank-you mamma. Itna acchaa khana banaya" (my little baby has grown-up in the last one month) and Pavel, a confirmed fish-hater, went for seconds and thirds. I don't have exact measurements but here goes:
1. Parboil about 300 gms of new potatoes (the small ones that we make whole) and slice them into 2-3 rounds
2. In about 2 tbsp of olive oil saute one big onion (sliced) and 1 cup chopped button mushrooms. when the onions are browned, toss in the potatoes and mix well and a pinch of salt and pepper.
3. Whizz together a 3" block of cheese (I had some leftover Maltese pickled cheese but any sharp hard cheese should be fine), cream and 1 tbsp of English mustard (I added enough cream to get a saucy consistency, you could add milk too)
5. In a baking dish, make a layer of half the potato-mushroom-onion mix.
6. Cover with chopped/flaked fish (I guess a white fish would flake and probably go better but I had Seer so I chopped some 200 gms of that)
7. Sprinkle about half a cup of chopped spring onions and some salt on top of the fish
8. pour the cream mix on top of the fish.
9. Top the whole thing with more of the potato mix.
10. Bake covered at 200 celsius for 25 minutes, and then another 10 minutes uncovered.
Its a one dish-meal but I guess a crisp salad on the side would be nice.
