Santre ki Kheer (Orange Milk Pudding)

If you go to Nagpur, you have to get santre, right? We had a couple in the morning and they aren’t very sweet yet. So, I decided to convert some into kheer. My mother-in-law makes this usually and I have made it for the first time. It’s fairly simple to make once you have done the fiddly bit of peeling the oranges.
Has to be had cold for the refreshing flavour.




Ingredients


 1.5 litres milk
1/2 cup sugar (more if you have a really sweet tooth)
1/4 tsp cardamom powder
4 oranges, peeled and all the pith and inner peels and seeds removed


 Method


Bring the milk to boil in a heavy based pan and then reduce on low heat till it is halved in quantity. Keep stirring once in a while to make sure that the milk doesn’t stick to the bottom. Add the sugar and cardamom, mix well and heat for another five mins. Take off from the heat and let it cool completely. Mix in the oranges and serve cold.
DO NOT REHEAT otherwise the milk will curdle.
