Ma's Paneer Do Pyaza

This is my mother-in-law's recipe for making paneer. She saw it being made on a Bangla TV Channel and adapted it. And today it was served for dinner especially made for her paneer-addict grandson. Needless to say, he is very very happy.

Ingredients


 250 gms Paneer
1/3 cup yoghurt
2 medium onion
2 small tomatoes
1" cube peeled ginger
4-5 cloves garlic
1 egg's white, whisked
1 tbsp cornflour
1/2 tsp kashmiri mirch powder
a pinch of sugar
salt to taste
2-3 tbsp oil

Method


Cut the paneer into cubes and marinate it for 30-45 mins in yoghurt, a pinch of salt and kashmiri mirch. Take out the cubes from the yoghurt mix and roll in cornflour, dip in egg white and lightly fry till it just catches colour. Keep aside.
Slice one onion finely and fry to crisp golden brown. Keep aside.
Grind to a paste the other onion, ginger, garlic and tomatoes. In the oil, fry the paste till it is browned and leaves oil. Add a pinch of sugar. Add the left-over yoghurt marinade and cook till the whole thing comes together as a thickish sauce. Adjust salt/chillies to taste.
Add the fried paneer pieces and simmer for 2-3 minutes.
Transfer to a bowl and top with all the fried onions
Serve with roti.
