Chicken Tonight!


Well, actually two nights ago. I had got a book for Vyom, and one of the stories in it ended with the cat wanting the fish and chips. And it all ended with Vyom wanting some fish and chips. Right now we have some really lovely ilish maachh (Hilsa fish) from Kolkata. And though it is really the most delicious fish ever, it is not suitable for making fish 'n' chips. I promised Vyom that the next evening, I'll get some fish and make fish 'n' chips for dinner. But as usual, I got late and could only find chicken.
This recipe is again a twist on something from BBC Good Food but it's a great all in one.

Chicken and Veggies with Honey Lemon Sauce


For the sauce:
In a saucepan, put juice from two lemons, 2 tbsp of honey, a sprig of dried rosemary, 3-4 tbsps of butter, 1 crushed clove of garlic, salt and pepper. Heat the whole thing till the butter is all melted and the sauce becomes a little clear.

For the rest:
Take about 500-750 gms of chicken (I had got the regular curry cut chicken from godrej, without skin and giblets etc, the small pack). Score with a knife and arrange on a roasting tin. Peel 3 large potatoes and cut them into thick wedges. Arrange them around the chicken pieces. Pour all but a few tsps of the sauce on top and mix well and leave to marinate for 30mins. Now cut carrots into rounds and slice beans and scatter on the top. You may want to cook the veggies a bit in a microwave or steam them a little. Pour the rest of the sauce over it, sprinkle rosemary and dot with some butter.
Roast in a preheated oven for about 40 minutes to an hour (just check that everything is cooked to your liking). Take out and serve
